《我最爱的中华宝贝》第73集 赵砺珩:味解乡愁 宣堡小馄饨

  由中共上海市委对外宣传办公室、上海市文化和旅游局、上海广播电视台融媒体中心(SMG NEWS)联合发起,2023“爱上海的理由”青少年英语短视频征集展播活动以“我最爱的中华宝贝”为题,诚邀全球新生代用向上的风貌、良好的英语表达和创意的镜头语言展现青少年眼中具有当代价值和世界意义的中华优秀传统文化。在这一集里,赵砺珩同学将带领我们前往他妈妈的故乡江苏泰兴市宣堡镇,在地方非遗美食“宣堡小馄饨”中品味一份最难忘却的家乡味。

  赵砺珩自述:

  “中国银杏第一镇”江苏省泰兴市宣堡镇,是我妈妈的故乡。这里有一样传承百年的美食,它的制作技艺被列入了泰州市非物质文化遗产名录,它就是宣堡小馄饨。

  皮薄如宣纸,形巧似灯笼,馅美胜山珍,汤鲜赛海味。宣堡小馄饨为何令人欲罢不能?让我们走近这一地方“美食一绝”。

  宣堡小馄饨有四大特色。

  第一,皮好。选用当地自产的上好精粉,兑上精确的水量,反复揉搓。在擀皮师傅的精湛技艺下,造就出这几近透明、可以点燃的手工面皮。

  第二,形好。在捏了一辈子小馄饨的老师傅手中,一滑,一捏,一滚,一粒馄饨一秒钟就能成型下锅,像小灯笼一样晶莹剔透。

  第三,馅好。选用本地新鲜土猪肥瘦适宜的前胛肉,手工剁成臊子,滑嫩而不失弹性。

  第四,汤好。香浓的金黄猪油渣撒上翠绿的小葱,再加上独门传承的红汤,鲜香四溢。

  最难忘却家乡味,宣堡小馄饨。

  Known as “the first town of Ginkgo in China”, Xuanbao Town in Taixing City, Jiangsu Province, is my mother’s hometown. There’s a century-old delicacy here, “the Xuanbao Small Wonton”, whose making skills have been listed as an intangible cultural heritage.

  Its skin is thin as rice paper; the shape is exquisite as a lantern; the filling is tastier than a delicacy; the soup is more delicious than a sea food.

  Why is Xuanbao Small Wonton so irresistible? Let’s take a look.

  This unique cuisine has four characteristics.

  Firstly, the perfect skin. It uses the best local flour, mixed with precise amount of water, and kneaded repeatedly.

  With the maker’s superb skills, the handmade skin is almost transparent which could be burned out.

  Secondly, the exquisite shape. In the hands of the master, sliding, pinching and rolling, a wonton could be formed in a second,like a crystal lantern.

  Thirdly, the tasty filling. It uses the local fresh pork with suitable fat and lean meat from the pork’s front shoulder, which is

  chopped by hand. Smooth and elastic.

  Finally, the delicious soup. The fragrant pork lard with some green onions, and the unique red soup makes it delicious.

  This is the most unforgettable taste of the hometown.
